Avocado: Toast Edition

It’s no secret that living in London means a terrible exchange rate & overpriced food. But, since being abroad I have a found a solution to any overpriced lunch: avocado toast. While many Insta famous fad followers get their fill on avocado in 50+ likes, my obsession with this delicious & healthy trend spans more than just social media.

Check out these few recipes that will become a staple for more than just your Instagram page.

Avocado Caprese Toast

Ingredients (for one piece of toast):

1 ripe avacado, mashed
1/2 cup of grape tomatoes, halved
1 slice of bread, toasted
2 ounces of fresh mozzarella, cut into small pieces
2-3 basil leaves
Sea salt and black pepper, for taste
Balsamic vinegar, to drizzle on top

 

Green, Eggs & Toast
(Poached Egg/Avocado Toast)

Ingredients (for one piece of toast):

1 ripe avacado, mashed
1 (perfectly) poached egg
1 slice of bread, toasted
1 tablespoon of parmesan cheese
Fresh basil for topping, finely chopped
Sea salt and black pepper, for taste

 

Bacon & Goat Cheese Avocado Toast

Ingredients (for one piece of toast):

1 ripe avacado, mashed
1 slice of bread, toasted
2 tablespoons of goat cheese, crumbled
Red pepper flakes, for topping
Sea salt and black pepper, for taste
Extra virgin olive oil (from Bodacious Brew if you’re lucky enough to be in Pensacola), to drizzle
